Rice with herbs - Very nice with Fish. A traditional new year meal.
Ingrediants - Serves 4
- 2 cups of Dried Sabzi* - You can buy this in packs.
- 3 Cups of Long grain / Basmati Rice
- 2 cloves of garlic
- Oil
- Butter
- Safron
* The dried sabzi includes: parsley, dill, fenugreek, and chives, but can be bought pre-packed and dried, in all persian stores and some Indian grocers.
Direction
Pour the dried sabzi into a bowl of luke warm water. soak for 10 minutes and drain. Bring 8 cups of water to a boil in a large pan. Chop garlic cloves finely. Add rice, garlic and salt to the water and boil for about 10 minutes stirring once or twice, drain and rinse with cold water. Heat oil and 1/3 cup of water along with saffron in a non-stick pan and fill it with alternate layers of rice and herbs starting with rice, add butter to each layer (Not too much, if you are worried about your waistline. Pour 1/4 cup of water over the mixture. Cover tightly with lid. Steam over medium low heat for 30 to 45 minutes. Serve with fish or chicken.
